CHORE(falco): disable sidekick-ui and Redis

- Use Grafana dashboard instead
- Set webui.enabled: false (disables UI and Redis)
- Remove ingress.yaml for falco-ui
- Saves ~384Mi memory (Redis 256Mi + UI 128Mi)
